Continue Liming

Vacation part two is now in full effect. After finishing summer school and sending those kids off with their credits, it's time to ride the hammock and work on a few of the summer goals. So what's up for part two? More racing! I finished up the Friday Night MTB race series in the top three for my category, and this weekend is the Squaw Valley Mountain Run which I've wanted to do for years. Then, more triathlon, a sprint and Olympic distance race each on the road, all while preparing for the big one, XTERRA Incline Village riding on the famous Flume trail. Time to write more. Read more. Hammock more. Meditate more. Create more. Maybe a mixtape, maybe a magazine. A little bit computer work geared toward school, but I think I will put that off until the last two weeks before school starts. I don't want to interfere with highest quality liming. Off to the lake for a little swim!

Could Veghater Be On His Way To Joining Us?

Hey! So Vegiehusband ate McDougall Pad Thai tonight which rocked and I highly recommend it to everyone, and he made an appointment with a personal trainer to develop a work out strategy at the gym!!! Wow!

The PadThai was such a hit with the whole family! Not only was it inexpensive to make, easy, and fast, it was incredible! We all loved it and ate it like mad!!! It did make a lot! The recipe says four servings but really there are 6 at least. I would use maybe 3/4's of the box of rice pad thai noodles next time. I doubled the garlic though and added more heat to the sauce, but over all this recipe ROCKED!!!

Excited that Veghusband is looking into working out. He even walked the dog. This is a great step!

Hello? Hello?

Anyone there?? Vegpedlr? Hello.....Hello......I could have walked to........

McDougall To The Rescue

Whew! After my possible lard fest last night I went to the natural foods store this morning and got some McDougall supplies. I read my Quick and Easy cookbook last night and picked out some Asian inspired yummy dishes for the rest of the week. I have my eyes on the Pad Thai tonight, then I also book marked Oriental Pasta and Spicy Mongolian Noodles. I will also make some fresh roles with lettuce as the wraps since our last trial with rice paper went a little awry. I thought I would spare my meat-munching husband the hassle of trying to wrap it all in a thin paper substance which would yield more work than he thinks any meal should take. However, I am back on track with my plan of fresh meals and noodles. VegiNoodle is pretty stoked about the menu too. This weekend I will revisit McDougall tacos and cilantro aioli. Off I go to wash my veggies!

Oh No.......Lard???

So, today started off great. I did my usual daily routine, but decided to walk into town to take VegiNoodle to her Jitsu class. We briskly walked to town and attended class and then decided to go to the local taqueria for dinner. I forgot that my favorite taqueria was sold and under new ownership so the McDougall menu was GONE!!! The former owner was a big McDougall follower so there was at least a quarter of the menu devoted to the plan......but now......nada!!! So, I did the best I could in devising my own McDougall style plate and it was great. However, then it dawned on me.....LARD!!! The old owners didn't use any lard or products containing lard so I always new I was OK. But now, I don't know, and the food was so good that I wonder if it was beacuse of LARD???!!! I am horrified now that I have ingested it all. Oh no!

My First Lime Post

Well, this past week was the first of my liming. I can't report that I did anything better than washing some bikes and taking lots of naps. What I did discover was how great I feel when I eat McDougall style and rely less on the junk. When I did get too much oil that one night I felt really bad for a whole day. Once back to low oil I felt better. It obviously works. I was even inspired to get my McDougall cookbook out and plan to continue here at home.

As for racing, its not for me right now. I would rather cheer you over the finish line or support you with your food and exercise goals. I am simply impressed with your passion for racing and would like to be your biggest fan and since I quit my job, entry fees are not in my new budget. Maybe next year I will do some competitions. As for now I am trying to adjust to setting new goals. More exercise is in the future and VegiNoodle loves the pool so we swim laps at least every other evening. I can't figure it all out tonight, but I wanted to get started with the blog.

I think my first focus is on my food and cleaning that up. Tonight I dined on wholewheat angel hair pasta with garbanzos in a garlic, whitewine, and lemon juice sauce. No fat, low sodium, and fresh. Of course a salad with a sweet balsamic drizzle was on the side. Since I just returned home from my welcome summering trip there was not much in the house to eat. But this was fast, easy, and tastey. Tomorrow, I will shop for ingredients for some McDougall recipes.

I think I will do the McDougall Tacos again, I really enjoyed them and so did the family. Again, fresh, easy, and yummy.

Until tomorrow stay true to your goals!

First Vacation: Over!

So the liming went like this: three consecutive weekends, three consecutive races. I did two 10K trail runing races and one XTERRA off road triathlon. The wto running races went very well, but the triathlon was a bit of a disaster. I am really slow. I suppose I should have raced the sprint distance, there I would have been more competitive. But I have the endurance to go for four hours, so I might as well get my money's worth, right? Other liming activities included a nice daily routine of training in the morning, eating, lunch, hammocking, reading, napping, cocktail hour, interesting dinners, movies and bed at a decent hour. All to do it again the next day!

A few highlights:

McDougall "Fish Tacos"
An absolute hit! Not very difficult if you have more than one person in the kitchen.

Regular racing in Tahoe
It was fun riding in the back of a truck at the last race, chatting with a guy I met at a previous race. Makes me feel local.

Watching Twin Peaks
We finally finished the series.

Developing new computer skills, and experimenting with new software to help my productivity.

Lowlights:

Finishing Twin Peaks.
What do we watch next?

Swimming at high altitude in COLD water.
Why can't find a decent breathing rhythm?

Not enough writing and blogging.
Where did the time go? My naps weren't that long, were they?

Unfortunately, as all things must end, so does this first episode of liming. The rest of this week will be spent preparing for summer school, cleaning, organizing, and of course training, so that my next XTERRA goes a bit smoother!
